High Hill Distillery began as a dream sparked by a visit to a Rum distillery in Colorado in 2015. Our oldest brother brought the idea to the family, and soon, we were all on board, excited to embark on this new adventure together. However, turning that dream into reality required more than just enthusiasm. We spent a year navigating the complexities of forming the company, gaining approval from the TTB and TABC, acquiring the necessary equipment, and learning the art of distillation. It was a challenging road, but our determination to create something special kept us moving forward. Today, we’re proud to share the fruits of our labor—High Hill Rum, crafted with care and a commitment to excellence.

Why High Hill?

In October of 1884, Juditha Popp and 5 of her children boarded the S.S. Elbe Express Steamer from the Moravia region in Austria. After over a month of travel by boat and rail, they settled near High Hill, Texas, and began a new life in the United States. Four generations later, the Popp family is proud to present High Hill Rum as a tribute to our family history. We hope you enjoy!
